Hello! I’m Spasia, AKA Mystic Burek.

This whole project started out with me delving into my grandmother's recipe book in July 2020, hungry for her layered cheese & egg phyllo pie which I used to request to greet me at the table any time I visited her back in Macedonia.

Coming from a place of longing, I embarked on making tester pies both layered and rolled, using various techniques passed down to me by the women in my family. I eventually came up with a burek recipe of my own, using the advice of my elders and my 15 years of experience in the food industry.

Working from home and with a 2 x shelf domestic oven, I spent 5 months selling bureks via instagram and arranging collection points around London. My capacity has now grown immensely, but I still do it all by myself and every pie is hand-rolled by me using fresh and seasonal fillings.

Since then I opened a shop in Sydenham, which although was very busy and was a huge success, with lines around the block, I quickly realised that the nature of what it means to have a shop or restaurant, is maybe, simply, not where I am at right now! But watch this space.

Although this started out as a project to further cement and preserve my own cultural identity, it's turned into a way of giving other people burek memories of their own!

I’m so excited for the next phase of my business, sharing more of what it means to be Balkan and all of the delicious foods that come with it from my new home at 172 Dartmouth Road - opening soon!
