Hello! I’m Spasia, AKA Mystic Burek.

This whole project started out with me delving into my grandmother's recipe book in July 2020, hungry for her layered cheese & egg phyllo pie which I used to request to greet me at the table any time I visited her back in Macedonia.

Coming from a place of longing, I embarked on making tester pies both layered and rolled, using various techniques passed down to me by the women in my family. I eventually came up with a burek recipe of my own, using the advice of my elders and my 15 years of experience in the food industry.

Working from home and with a 2 x shelf domestic oven, I spent 5 months selling bureks via instagram and arranging collection points around London. My capacity then grew immensely, but I still did it all by myself, hand rolling each pie and stuffing them with the finest seasonal ingredients. I moved about a lot at various sell-out pop ups across the city.

Since then I opened a shop in Sydenham, which although was very busy and was a huge success it didn’t quite work out and I quickly realised that a full-time shop or restaurant wasn’t what I wanted, after falling in love with Tom, the man that refurbished the shop and wanting to start a family with him.

Although this started out as a project to further cement and preserve my own cultural identity, it's turned into a truly Balkan, family run business.

Together with our newborn, we lovingly refurbished our new venue DOMA! Which is now open, you can find all details on it via the first page and ‘‘events at Doma’’. Much more than a cafe or restaurant, we are focussing on some truly special events.

DOMA IS THE NEW HOME OF BALKAN HOSPITALITY and we can’t wait to have you at our home!
